What ship is good for gas mining missions?

As far as I can see, this one and this one are the only two level 4 mining missions that involve gas mining. They both require 4250 m3 of gas. How doable is it to do those in 2 goes? First fly in with a combat ship and pwn the rats, then warp back to dock, enter a T2 Transport, and come in again, and just suck the gas AFK?

None. There is no mining vessel for you without Omega other than a Venture. Other alpha ships can be fitted to mine - battleships, for instance. However at their best they won't mine much more than the Venture, they won't hold as much ore, and they'll just be a much more expensive killmail when you inevitably get killed in low sec.

The initial cost is a bit high, but the Return on the Investment is quick. You can also train Mining Frigate and Gas harvesting to 5 in about 2 or 3 weeks. You can pretty much make back the value of your fitted Venture and the skill books in about 2 or 3 hours of ninja huffing in wormholes. Some advice: train Gas Harvesting to either 2 or 5.

Suggested Mining Ship for a newb?

It's quite hard to beat a well fitted Venture for a new player. A Gnosis is a 25-30m ISK ship and if, as @Raimos_Okel says, you are a few days in that's a lot of ISK. The Venture is free or at worst cheap - under 200k and rather handy miner if fitted well. It's fitting it that's the trick, and a chance to learn.
